There're very few that only focus on one girl, usually there're two at least. I'm haven't been keeping track of what's been ported over to PS2 too so..
but! Realta Nua is good, as is Ayakashibito, and I'm sure they're on PS2. Clannad is more Key fare, so I'm not sure if you'll like that. Utawarerumono is ... an epic tale of war, betrayal, and more war, so if you like things like that you should enjoy it.
I think この青空に約束を is excellent too, but again that has six characters...
Personally I'm not a big fan of games like Shuffle! either, so. Main characters with no personality also make me fall asleep. I'm pretty sure you'd appreciate Utawarerumono's characters, actually.
